Ingredients

- 1 pound ground beef (or turkey)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet low-carb taco seasoning
- 1 can diced tomatoes (about 14 ounces)
- 1 can black olives, sliced (optional)
- 2 cups cheddar cheese, shredded
- 1 cup sour cream
- 1 cup cauliflower rice (fresh or frozen)
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, add the ground beef and diced onions. Cook until the meat is browned and the onions are soft, about 5-7 minutes.
- Stir in the minced garlic and taco seasoning. Cook for another 1-2 minutes until fragrant.
- Add the can of diced tomatoes (with juice) and cauliflower rice to the meat mixture. Stir together and let it cook for 5 minutes.
- Lightly grease your baking dish.
- Spoon half of the meat mixture into the bottom of the baking dish. Spread evenly. Add half of the sour cream over the meat, then sprinkle half of the cheese on top.
- Add the remaining meat mixture on top of the cheese layer, spread the remaining sour cream, and finish with the rest of the cheese. If using, sprinkle olives on top.
- Bake for about 25-30 minutes, or until the cheese is bubbly and golden.
- Let it cool for a few minutes and garnish with fresh cilantro before serving.
Notes
Customize with your favorite toppings such as sliced avocado or diced tomatoes.
