Mediterranean Hummus Dip with Pita Chips

A refreshing and flavorful dip made with creamy hummus, fresh vegetables, and crispy pita chips, perfect for gatherings or quiet evenings.

Ingredients

  • 1 cup plain Greek yogurt
  • 1 medium seedless cucumber, chopped
  • 1 teaspoon white wine vinegar
  • 2 teaspoons minced fresh mint or 1 teaspoon dried mint
  • 1 carton (10 ounces) hummus
  • 1 medium red onion, chopped
  • 1 cup chopped roasted sweet red peppers, drained
  • 2 packages (4 ounces each) crumbled feta cheese
  • 1/2 cup pitted Greek olives, sliced
  • 2 plum tomatoes, chopped
  • Minced fresh parsley (optional)
  • Additional minced fresh mint (optional)
  • 20 pita pocket halves
  • 1/4 cup olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Prepare the Strained Yogurt: Line a strainer with cheesecloth or a coffee filter. Place this strainer over a bowl. Add the Greek yogurt to the strainer and cover it well. Refrigerate it for 8 hours or overnight.
  2. Mix the Yogurt: In a bowl, mix the strained yogurt with chopped cucumber, vinegar, and mint. Set this mixture aside.
  3. Layer the Hummus: In a deep dish pie plate, spread the hummus evenly with a spatula.
  4. Add the Toppings: Layer the chopped onion, roasted red peppers, crumbled feta, sliced olives, and chopped tomatoes on top of the hummus.
  5. Finish with Yogurt: Add the yogurt mixture you prepared earlier on top. Sprinkle some minced parsley and mint if desired.
  6. Chill the Dip: Cover the dish and chill it in the refrigerator for at least 30 minutes.
  7. Prepare the Pita Chips: Preheat your oven to 400°F (204°C). Cut each pita half into wedges and separate them. Brush with olive oil and sprinkle salt and pepper.
  8. Bake the Chips: Bake in the oven for about 8-10 minutes until crisp and slightly golden.
  9. Serve: Remove the pita chips and serve warm with the Mediterranean Hummus Dip.

Notes

Dip can be prepared a day in advance; store in the refrigerator. Best enjoyed fresh.
