- 4 large egg whites, room temperature
- 1/2 teaspoon cream of tartar
- 1/8 teaspoon salt
- 1 cup (200 g) granulated sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 225F (105C) and line a large cookie sheet with parchment paper.
- In a clean bowl, combine egg whites, cream of tartar, and salt.
- Beat the mixture on low speed until foamy.
- Gradually add sugar, 1 tablespoon at a time, mixing well after each addition.
- Increase speed to high and beat until stiff peaks form and sugar is dissolved.
- Stir in vanilla extract and food coloring if desired.
- Transfer the mixture to a piping bag and pipe onto the cookie sheet.
- Bake for 1 hour, then turn off the oven and leave the cookies to cool in the oven for 1-2 hours.
- Store in an airtight container away from heat and moisture.
