Ingredients

  • 4 large egg whites, room temperature
  • 1/2 teaspoon cream of tartar
  • 1/8 teaspoon salt
  • 1 cup (200 g) granulated sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 225F (105C) and line a large cookie sheet with parchment paper.
  2. In a clean bowl, combine egg whites, cream of tartar, and salt.
  3. Beat the mixture on low speed until foamy.
  4. Gradually add sugar, 1 tablespoon at a time, mixing well after each addition.
  5. Increase speed to high and beat until stiff peaks form and sugar is dissolved.
  6. Stir in vanilla extract and food coloring if desired.
  7. Transfer the mixture to a piping bag and pipe onto the cookie sheet.
  8. Bake for 1 hour, then turn off the oven and leave the cookies to cool in the oven for 1-2 hours.
  9. Store in an airtight container away from heat and moisture.
