Instructions
- In a mixing bowl, combine rolled oats, peanut butter, honey (or maple syrup), and vanilla extract.
- Mix until well combined.
- If desired, fold in chocolate chips.
- Spoon the mixture into muffin liners or a greased muffin tin.
- Press down to compact the mixture.
- Refrigerate for about 30 minutes or until firm.
