- 1 cup (226 g) unsalted butter
- 1 cup (200 g) granulated sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract (optional)
- 1 large egg
- 2 3/4 cup (345 g) all-purpose flour
- 2 tablespoons cornstarch
- 1/4 teaspoon baking powder
- 1/2 teaspoon salt
- Additional flour for rolling cookies
- 1 batch sugar cookie icing or sanding sugar for decorating
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and set it aside.
- In a large mixing bowl, beat the butter and sugar together until creamy and smooth.
- Add the egg, vanilla extract, and almond extract, mixing well until combined.
- In another bowl, whisk together the flour, cornstarch, baking powder, and salt.
- Gradually add the dry mixture to the wet ingredients and mix until a dough forms.
- Shape the dough into a disk and roll it out on a floured surface to about 1/4 inch thick.
- Use cookie cutters to cut shapes from the dough and place them on the prepared baking sheet.
- Bake in the preheated oven for 8-10 minutes until lightly golden around the edges.
- Cool on the baking sheet for 5-10 minutes, then transfer to a cooling rack.
- Decorate as desired once completely cooled.
Notes
These cookies can be decorated in many ways or enjoyed plain. They can be stored for about a week at room temperature, or up to three months in the freezer.
