Ingredients

  • Peel of 45 lemons
  • 1 cup sugar
  • 1 to 1.5 oz lemon oleo saccharum
  • 1 cup lemon sparkling water or non-alcoholic Prosecco
  • 1 oz lemon juice (optional)
  • Lemon slice or thyme sprig (for garnish, optional)

Instructions

  1. Prepare the oleo saccharum by washing and peeling your lemons, avoiding too much of the white pith. Place the lemon peel in a jar with an equal amount of sugar by weight. Stir and muddle the sugar through the lemon.
  2. Cover and leave at room temperature overnight.
  3. Strain the mixture into a jar using a fine mesh strainer.
  4. Fill a large wine glass with ice, add the oleo saccharum, and your choice of lemon sparkling water or non-alcoholic Prosecco.
  5. Taste and add optional lemon juice if desired.
  6. Garnish with a lemon slice or thyme sprig if preferred.

Notes

For a lower-calorie option, use a sugar substitute in the oleo saccharum and watch portion sizes.
