- 2 cups quick oats or rolled oats
- 2 tsp baking powder
- 1.5 tsp ground cinnamon (optional)
- 3/4 tsp sea salt
- ¾ cup cottage cheese
- 2 large eggs
- ⅓ cup pure maple syrup
- 3 Tbsp avocado oil
- 1 tsp pure vanilla extract
- 1 cup chocolate chips
Instructions
- Preheat the oven to 350°F and line a 9” x 5” loaf pan with parchment paper.
- Transfer the oats to a high-powered blender and blend for 1 minute until a flour forms.
- Add the baking powder, ground cinnamon, and sea salt to the blender and blend for a few seconds to combine.
- In a mixing bowl, whisk together the cottage cheese, eggs, pure maple syrup, avocado oil, and vanilla extract.
- Pour the dry ingredients into the bowl with the wet ingredients and mix well. Stir in the chocolate chips.
- Transfer the batter to the prepared loaf pan. Cover with aluminum foil and bake for 40 minutes. Remove the foil and bake for another 10 to 15 minutes until baked through, checking with a thermometer.
- Allow the bread to cool to room temperature before slicing and serving.
Notes
Serve plain or with butter, yogurt, or cream cheese. Pairs well with warm beverages.
