One Pan Chicken and Potatoes

Ingredients

  • 8 chicken thighs and drumsticks (about 2 1/2 pounds)
  • 1 1/2 pounds baby potatoes (halved)
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 6 garlic cloves (pressed)
  • 1 teaspoon 7 spice
  • 1 teaspoon paprika
  • 2 teaspoons salt
  • 1 teaspoon black pepper

Instructions

  1. Preheat your oven to 400 degrees F.
  2. Use a paper towel to dry the chicken and potatoes well and place them in your baking dish.
  3. In a small bowl, mix olive oil, lemon juice, pressed garlic, 7 spice, paprika, salt, and black pepper. Whisk until well combined.
  4. Drizzle the sauce over the chicken and potatoes in the pan, ensuring everything is coated evenly.
  5. Bake uncovered for 55-65 minutes until the chicken is cooked through and the potatoes are fork-tender.
  6. If desired, broil the dish for an extra 3-5 minutes for a golden brown finish.
  7. Let the chicken rest for 5 minutes after removing it from the oven.
  8. Garnish with fresh parsley if desired and serve.

Notes

This dish is great with a side salad or steamed vegetables. Leftovers can be stored in an airtight container for up to 4 days.
