- 1 lb penne pasta
- 1 lb Italian sausage (sweet or spicy)
- 2 cups fresh spinach
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add Italian sausage, breaking it up with a spoon, and cook until browned.
- Stir in minced garlic and cook for 1 minute.
- Add chicken broth and bring to a simmer.
- Stir in penne pasta and cook until al dente, about 10-12 minutes.
- Reduce heat to low and stir in heavy cream, spinach, and Parmesan cheese.
- Cook until the spinach is wilted and the sauce is creamy.
- Season with salt and pepper to taste, then serve immediately.
Notes
For extra flavor, try adding red pepper flakes or sun-dried tomatoes.
