Oven Swiss Steak

Ingredients

  • 8 bacon strips
  • 2 pounds beef top round steak (3/4 inch thick)
  • 2 cups sliced fresh mushrooms
  • 1 can (14-1/2 ounces) diced tomatoes, undrained
  • 1/2 cup chopped onion
  • 1 to 2 teaspoons dried tarragon
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1 cup heavy whipping cream
  • Minced fresh parsley, optional

Instructions

  1. Cook the bacon in a large skillet over medium heat until crispy, about 5-7 minutes. Remove and drain, reserving drippings.
  2. Crumble the cooked bacon and set aside.
  3. Trim excess fat from the steak and cut into serving-size pieces.
  4. Brown the steak pieces in the reserved drippings for about 4-5 minutes on each side.
  5. Layer mushrooms, diced tomatoes, and onion over the browned beef.
  6. Sprinkle tarragon and crumbled bacon over the mixture.
  7. Cover and bake in a preheated oven at 325°F for 75-105 minutes, basting twice during cooking.
  8. Once tender, remove the meat and keep warm.
  9. Mix cornstarch and water until smooth, add to skillet, and bring to a boil to thicken, about 2 minutes.
  10. Stir in cream and simmer for 3-4 minutes.
  11. Return meat to skillet, coating with sauce, and garnish with parsley if desired.

Notes
