Overnight Pecan Pie French Toast

A delightful breakfast that turns the flavors of pecan pie into a luxurious French toast, made ahead and baked to perfection.

Ingredients

  • 1 loaf of French Bread
  • 3/4 cup milk
  • 3/4 cup heavy cream
  • 6 eggs plus 3 egg yolks
  • 2 Tbsp vanilla extract
  • 6 Tbsp butter (salted)
  • 1 cup light brown sugar, packed
  • 1/3 cup light corn syrup
  • 1/4 cup maple syrup
  • 1 cup pecans, chopped

Instructions

  1. The night before, slice the French bread into thick slices and arrange them in a 9×13 dish so they fit snugly.
  2. In a large bowl, whisk the 6 eggs plus 3 egg yolks with 3/4 cup milk and 3/4 cup heavy cream. Add 2 Tbsp vanilla extract and whisk until smooth.
  3. Pour the egg and cream mix evenly over the bread. Press the bread down gently so each slice soaks up the custard.
  4. In a small saucepan, melt 6 Tbsp butter with 1 cup packed light brown sugar, 1/3 cup light corn syrup, and 1/4 cup maple syrup. Stir until the sugar melts and the mix is smooth. Remove from heat and let cool a bit.
  5. Chop 1 cup pecans. Spread half the pecans over the soaked bread. Pour the cooled syrup-butter mix over the top. Sprinkle the rest of the pecans on top.
  6. Cover the dish with foil or plastic wrap and refrigerate overnight for at least 6–8 hours.
  7. The next morning, preheat the oven to 350°F (175°C). Remove foil and let the dish sit while the oven heats for 10 minutes.
  8. Bake uncovered for about 40–45 minutes, until the top is golden and the custard is set in the middle. If the top browns too fast, cover lightly with foil.
  9. Let sit for 10 minutes before serving so the topping firms up. Slice into portions and serve warm.

Notes

For lighter options, substitute low-fat milk and reduce sugar. Serve with a scoop of Greek yogurt and fresh berries for added protein and fiber.
