Ingredients

- 3 Tbsp cold water
- 4 tsp (12 g) gelatin
- 3 cups (710 ml) heavy cream
- 1 cup (235 ml) whole milk
- 1/2 cup (100 g) granulated sugar
- Pinch salt
- 2 tsp vanilla extract
Instructions
- Pour cold water into a bowl, add gelatin, and mix. Let it rest for at least 5 minutes.
- Fill a large bowl with ice and cold water to create an ice bath.
- In a saucepan, bring heavy cream, milk, sugar, and salt to a simmer while stirring frequently. Remove from heat once simmering.
- Heat the gelatin mixture in the microwave for 10-15 seconds until melted, then whisk into the cream mixture for 30 seconds.
- Set the saucepan over the ice bath, stirring until cool. Stir in vanilla extract.
- Divide the mixture among 8 ramekins, cover with plastic wrap, and refrigerate for at least 4 hours until set.
- To unmold, run a knife around the edges, dip the ramekin in hot water, then invert onto a plate.
Notes
Panna cotta can be stored in the refrigerator for up to 3 days or frozen for about a month. Thaw in the refrigerator overnight before serving.
