Ingredients
Scale
- 2 and 3/4 cups all-purpose flour, spooned and leveled
- 2 tablespoons cornstarch
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon fine salt
- 2 teaspoons ground ginger
- 1 and 1/2 teaspoons ground cinnamon
- 1/4 teaspoon ground cloves
- 3/4 cup unsalted butter, softened to room temp
- 3/4 cup granulated sugar
- 1/4 cup packed brown sugar
- 1/3 cup unsulfured molasses
- 1 large egg, room temp
- 1 teaspoon vanilla extract
- 2 teaspoons milk or cream
Instructions
- Cream the butter and sugars together on medium speed until fluffy, about 2 minutes.
- Add the egg and vanilla and beat until fully combined.
- Mix in the molasses until smooth and caramel-colored.
- In a separate bowl, whisk together the dry ingredients.
- Add the dry ingredients to the wet ingredients in two additions, adjusting with milk if necessary.
- Press the dough into disks, wrap, and chill for at least 1 hour.
- Preheat the oven to 350°F (175°C) and roll out the dough to about 1/4 inch thickness.
- Cut out shapes and place them on parchment-lined baking sheets.
- Bake for 8 to 10 minutes until the edges look set.
- Cool on the sheet for 5 minutes before transferring to a rack.
- Decorate as desired once cool.
Notes
Dough can be chilled for up to 3 days or frozen for up to 2 months. Use a slices of bread in the container for maintaining moisture.
