Ingredients

- 1 cup almonds
- 1 cup cashews
- 1/3 cup cocoa powder
- 1/2 teaspoon cinnamon
- Pinch of salt
- 1 cup dates (soaked in boiling water for 5 minutes)
- 1 tsp vanilla extract
- 1/2 teaspoon coconut oil
- 1–2 tablespoons water
- Pretzels
- Pomegranate arils or white chocolate chips (or use candy eyeballs)
Instructions
- Soak the dates in boiling water for 5 minutes to soften.
- In a food processor, add almonds, cashews, cocoa powder, cinnamon, and a pinch of salt. Process until crumbly.
- Add soaked dates, vanilla extract, and coconut oil. Process until well combined.
- If mixture is dry, add water one tablespoon at a time until it holds together.
- Roll the mixture into 1 ½ inch balls and place on a large plate.
- Break pretzels into pieces to form reindeer antlers and stick into the tops of the balls.
- Poke two brown rice puffs into each ball for eyes and place a pomegranate aril underneath for the nose.
- Chill the bites in the fridge to let them cool and harden.
- Store in an airtight container in the fridge for up to one week or freeze for up to three months.
Notes
These bites can be decorated with different toppings. Let kids help with decoration for extra fun!
