Red Star Cookies

Delightful cookies with a refreshing orange flavor and bright red color, perfect for festive occasions.

  • Total Time: 120 minutes
  • Yield: 24 servings 1x

Ingredients

Scale
  • 11/2 cups butter, softened
  • 1/2 cup shortening
  • 1 cup sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1/4 cup thawed orange juice concentrate
  • 1 teaspoon vanilla extract
  • 5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3 cups confectioners’ sugar
  • 1/3 cup warm water
  • 2 tablespoons plus 2 teaspoons meringue powder
  • 1/4 teaspoon cream of tartar
  • Red paste food coloring
  • 2 tablespoons red colored sugar

Instructions

  1. In a large bowl, cream the butter, shortening, and both sugars until light and fluffy (about 5 to 7 minutes).
  2. Beat in the eggs one at a time, mixing well after each addition.
  3. Add the orange juice concentrate and vanilla extract to the mixture, stirring until combined.
  4. In another bowl, whisk together flour, baking soda, and salt. Gradually add this dry mixture into the creamed mixture, stirring until the dough comes together.
  5. Divide the dough in half, shape each half into a disk and wrap them in plastic wrap. Refrigerate for about 2 hours or until firm.
  6. Preheat the oven to 350°F (175°C).
  7. On a lightly floured surface, roll out each portion of dough to about 1/4 inch thickness.
  8. Use a floured star-shaped cookie cutter to cut out the cookies, placing them about 1 inch apart on ungreased baking sheets.
  9. Bake for 8 to 10 minutes or until the edges are light brown.
  10. Let the cookies cool on the pans for about 5 minutes before transferring to wire racks to cool completely.
  11. For the icing, combine confectioners’ sugar, warm water, meringue powder, and cream of tartar in a small bowl. Beat on low speed until blended, then beat on high for 4 to 5 minutes until stiff peaks form.
  12. Tint the icing red using food coloring and cover unused icing to prevent drying out.
  13. Spread the icing on the cooled cookies and immediately sprinkle with red colored sugar. Let the cookies set.
