- 1 1/2 cups white whole wheat flour, whole wheat flour, or all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 large eggs
- 3/4 cup plain Greek yogurt, plus extra for eyes
- 3/4 cup milk or milk alternative
- 2 tablespoons oil
- 2 tablespoons maple syrup (optional)
- 1 teaspoon vanilla extract
- Fresh strawberries, stems removed
- Banana slices
- Blueberries
- Raspberries
- Mini chocolate chips
Instructions
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, whisk the eggs, Greek yogurt, milk, oil, maple syrup (if using), and vanilla extract until smooth.
- Add the dry ingredients to the wet ingredients and stir gently until just combined.
- Preheat your griddle or frying pan to 325°F and lightly spray with cooking spray.
- Pour about 1/3 cup of batter onto the heated griddle and cook until edges are dry and bubbles form on top, about 3-5 minutes.
- Flip the pancake and cook for another 1-2 minutes until golden brown.
- Transfer cooked pancakes to a platter and repeat with remaining batter.
- Decorate each pancake with halved strawberries for Santa’s hat, banana slices for the pom-pom, and additional banana slices for the beard. Use Greek yogurt for eyes, blueberries for the centers, a raspberry for the nose, and mini chocolate chips for a smile.
- Serve immediately while warm and fluffy, optionally with maple syrup.
