Ingredients

  • 1 package three-cheese tortellini

  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the sausage over medium heat until fully cooked.
  2. Add the diced sweet potatoes and minced garlic; cook until sweet potatoes are tender.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the tortellini and cook according to package instructions.
  5. Stir in the spinach and heavy cream, cooking until the spinach wilts.
  6. Season with salt and pepper to taste, then serve hot.

Notes

This soup can be stored in the fridge for 3-4 days or frozen for 2-3 months. Consider adding grated cheese or fresh herbs when serving.
