- 1 pound sausage
- 1 package three-cheese tortellini
- 2 cups sweet potatoes, diced
- 2 cups spinach
- 3 cloves garlic, minced
- 4 cups chicken broth

- Salt and pepper to taste
Instructions
- In a large pot, brown the sausage over medium heat until fully cooked.
- Add the diced sweet potatoes and minced garlic; cook until sweet potatoes are tender.
- Pour in the chicken broth and bring to a boil.
- Add the tortellini and cook according to package instructions.
- Stir in the spinach and heavy cream, cooking until the spinach wilts.
- Season with salt and pepper to taste, then serve hot.
Notes
This soup can be stored in the fridge for 3-4 days or frozen for 2-3 months. Consider adding grated cheese or fresh herbs when serving.
