- 1 lb ground beef
- 2 cups cottage cheese
- 1 cup shredded cheddar cheese
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions
- In a skillet, brown the ground beef over medium heat until crispy, draining most of the juice.
- While the beef is cooking, blend the cottage cheese in a food processor until smooth.
- Combine the blended cottage cheese with the browned beef, adding in shredded cheddar, smoked paprika, garlic powder, onion powder, salt, and pepper.
- Heat the mixture on low until everything is combined and warmed through.
- Serve immediately, garnished with fresh cilantro.
Notes
For extra creaminess, consider adding a tablespoon of cream cheese or a splash of milk during blending. This queso works great as a dip with tortilla chips or as a topping for nachos.
