Ground Beef Cottage Cheese Queso

A creamy and high-protein queso made with ground beef and blended cottage cheese, perfect for parties or as a satisfying snack.

Ingredients

  • 1 lb ground beef
  • 2 cups cottage cheese
  • 1 cup shredded cheddar cheese
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. In a skillet, brown the ground beef over medium heat until crispy, draining most of the juice.
  2. While the beef is cooking, blend the cottage cheese in a food processor until smooth.
  3. Combine the blended cottage cheese with the browned beef, adding in shredded cheddar, smoked paprika, garlic powder, onion powder, salt, and pepper.
  4. Heat the mixture on low until everything is combined and warmed through.
  5. Serve immediately, garnished with fresh cilantro.

Notes

For extra creaminess, consider adding a tablespoon of cream cheese or a splash of milk during blending. This queso works great as a dip with tortilla chips or as a topping for nachos.
