Sheet Pan Pancakes

Ingredients

  • 8 Tbsp unsalted butter, melted, divided
  • 2 1/2 cups all-purpose flour, plus 1 Tbsp for dusting pan
  • 1/4 cup granulated sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 3 large eggs
  • 2 1/2 cups low-fat buttermilk
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 425°F. Brush a rimmed baking sheet with 2 Tbsp of melted butter and dust with 1 Tbsp of flour.
  2. In a mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk eggs. Add buttermilk and vanilla extract, then mix in the remaining melted butter.
  4. Pour the buttermilk mixture into the flour mixture and whisk until just combined.
  5. Pour the batter into the prepared baking sheet and spread evenly.
  6. Bake for 15 to 18 minutes, until baked through.
  7. Brush with remaining melted butter, cut into squares, and serve warm.

Notes

Customize with fruits, chocolate chips, or nuts for added flavor. Serve with maple syrup, whipped cream, or yogurt.
