Shrimp Fajitas

Shrimp Fajitas combine juicy shrimp, colorful peppers, and tasty spices, all wrapped in warm tortillas for a quick and flavorful meal.

Ingredients

  • 1 1/2 lbs large shrimp, peeled and deveined
  • 2 Tbsp fresh lime juice
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/4 tsp cayenne pepper (optional)
  • Salt and freshly ground black pepper
  • 3 Tbsp olive oil or vegetable oil, divided
  • 1 small yellow or red onion, halved and sliced
  • 2 bell peppers, any color
  • 2 cloves garlic, minced
  • 3 Tbsp chopped fresh cilantro
  • 8 medium flour tortillas, warmed
  • Sliced avocado (optional)
  • Crumbled queso fresco (optional)

Instructions

  1. Pat the shrimp dry with paper towels, then place in a medium mixing bowl. Add lime juice, chili powder, cumin, coriander, and cayenne pepper. Toss to coat and set aside.
  2. Heat 1 1/2 tablespoons of olive oil in a skillet over medium heat. Add sliced onions and sauté for 2 minutes, then add sliced bell peppers, seasoning with salt and pepper. Sauté until crisp-tender, about 5-7 minutes. Transfer to foil to keep warm.
  3. Return skillet to heat and add the remaining olive oil. Season shrimp with salt and pepper, then add to the skillet. Cook for 1 1/2 minutes on one side.
  4. Add minced garlic to skillet and toss with the shrimp. Cook until shrimp are pink and opaque, about 1-2 minutes.
  5. Toss in chopped cilantro and give everything a final stir. Serve over warmed tortillas with optional toppings.

Notes

Feel free to customize your fajitas with additional toppings and proteins, or use different vegetables.
