Ingredients

- 1 1/2 lbs large shrimp, peeled and deveined
- 2 Tbsp fresh lime juice
- 2 tsp chili powder
- 1 tsp ground cumin
- 1/2 tsp ground coriander
- 1/4 tsp cayenne pepper (optional)
- Salt and freshly ground black pepper
- 3 Tbsp olive oil or vegetable oil, divided
- 1 small yellow or red onion, halved and sliced
- 2 bell peppers, any color
- 2 cloves garlic, minced
- 3 Tbsp chopped fresh cilantro
- 8 medium flour tortillas, warmed
- Sliced avocado (optional)
- Crumbled queso fresco (optional)
Instructions
- Pat the shrimp dry with paper towels, then place in a medium mixing bowl. Add lime juice, chili powder, cumin, coriander, and cayenne pepper. Toss to coat and set aside.
- Heat 1 1/2 tablespoons of olive oil in a skillet over medium heat. Add sliced onions and sauté for 2 minutes, then add sliced bell peppers, seasoning with salt and pepper. Sauté until crisp-tender, about 5-7 minutes. Transfer to foil to keep warm.
- Return skillet to heat and add the remaining olive oil. Season shrimp with salt and pepper, then add to the skillet. Cook for 1 1/2 minutes on one side.
- Add minced garlic to skillet and toss with the shrimp. Cook until shrimp are pink and opaque, about 1-2 minutes.
- Toss in chopped cilantro and give everything a final stir. Serve over warmed tortillas with optional toppings.

Feel free to customize your fajitas with additional toppings and proteins, or use different vegetables.
