Breakfast Grilled Cheese Sandwich

A warm and crunchy breakfast grilled cheese sandwich filled with gooey cheese, eggs, and optional meats or veggies for a satisfying start to your day.

Ingredients

  • 2 tablespoons softened butter or mayo
  • 4 slices of bread (sourdough, country white, or sturdy wheat)
  • 4 slices of cheddar or your favorite melty cheese
  • 2 eggs
  • Salt and pepper to taste
  • 4 slices of bacon or 4 thin ham slices (optional)
  • Baby spinach (optional)
  • Hot honey or a thin swipe of Dijon (optional)

Instructions

  1. Cook the bacon until crisp or warm ham lightly in the pan. Set aside on a plate lined with paper towels.
  2. Scramble or fry the eggs, keeping them soft or aiming for a slightly runny yolk. Season with salt and pepper.
  3. Butter one side of each slice of bread. On the unbuttered side of two slices, stack a slice of cheese, a thin layer of egg, and your meat. Add spinach if using. Top with the second slice of cheese and finish with the second bread slice, buttered side out.
  4. Preheat a skillet on medium-low. Place the sandwiches in and cover for 45 to 60 seconds to help the cheese start melting. Uncover and cook another 2 to 3 minutes until the bottom is golden.
  5. Flip the sandwiches and cook the second side until the cheese is fully melted and the bread is evenly browned. If the crust is done but the cheese needs more time, lower the heat and cover for another 30 seconds.
  6. Rest the sandwiches for one minute on a board before slicing to keep fillings from sliding out.

Notes

Feel free to customize with different cheeses or add sautéed vegetables for a vegetarian option. Pre-cooking bacon and prepping ingredients in advance can save time during breakfast rush.
