Slow Cooked Garlic Mashed Potatoes

Creamy and flavorful garlic mashed potatoes made effortlessly in a slow cooker.

Ingredients

  • 4 lbs red potatoes, cleaned and rinsed, cut into 1 1/2-inch pieces
  • 1/2 cup water
  • 1 tsp salt, or to taste
  • 1/2 tsp pepper, or to taste
  • 1 1/2 Tbsp minced garlic (about 4 cloves)
  • 1/4 cup butter, melted
  • 2/3 cup sour cream
  • 1/2 cup cream, warmed in the microwave
  • 1/2 cup milk, warmed in the microwave, or as desired
  • Minced chives and butter, for serving (optional)

Instructions

  1. Spray a 6 to 7-quart slow cooker with non-stick spray.
  2. Place the cleaned and cut potatoes in the slow cooker.
  3. Pour the 1/2 cup of water evenly over the potatoes.
  4. Sprinkle the salt and pepper over the top, tossing to coat the potatoes evenly.
  5. Add the minced garlic and pour the melted butter over the potatoes.
  6. Cover the slow cooker and cook on high heat for about 4 to 4 ½ hours until the potatoes are tender, without draining the water.
  7. Use a potato masher to mash the potatoes.
  8. Add the sour cream and heavy cream to the mashed potatoes and whip with an electric hand mixer until desired texture.
  9. As you mix, add warm milk until you achieve the consistency you like.
  10. Serve warm, optionally topped with more butter and minced chives.

Notes

These mashed potatoes can be served with various main dishes and are easy to store for leftovers.
