- 1 1/2 lbs beef chuck, sliced into thin strips
- 1/2 yellow onion, sliced
- 1 cup low-sodium beef broth or consomme
- 1/2 cup low-sodium soy sauce
- 1 Tbsp sesame oil
- 1/3 cup dark-brown sugar
- 3 cloves garlic, minced
- Salt and freshly ground black pepper, to taste
- 2 1/2 Tbsp cornstarch
- 3 cups broccoli florets
- Sesame seeds, for garnish (optional)
Instructions
- Add the sliced beef and onion to the slow cooker, spreading them out evenly.
- In a bowl, whisk together the beef broth, soy sauce, sesame oil, brown sugar, and minced garlic. Season with salt and black pepper to taste.
- Pour the sauce over the beef and onions in the slow cooker, ensuring everything is well coated.
- Cover the slow cooker and cook on low heat for 150 to 210 minutes (2 1/2 to 3 1/2 hours).
- Ladle out 1/4 cup of the broth and mix it with the cornstarch to make a slurry. Stir gently to avoid lumps.
- Return the cornstarch mixture to the slow cooker and stir to combine.
- Add the broccoli to the slow cooker. Cover and increase the heat to high, cooking for an additional 20 minutes or until the broccoli is tender and the sauce has thickened.
- Remove the onion pieces if preferred. Serve over rice and garnish with sesame seeds if desired.
