Slow Cooker Beef Stew

A hearty and comforting slow cooker beef stew made with tender chunks of beef and fresh vegetables.

Ingredients

  • 2 1/2 lbs chuck roast, trimmed and diced
  • 2 1/2 Tbsp olive oil
  • Salt and freshly ground black pepper
  • 1 large yellow onion, chopped
  • 3 medium celery stalks, chopped
  • 4 cloves garlic, minced
  • 1/4 cup tomato paste
  • 3 cups low-sodium beef broth (divided)
  • 1 Tbsp Worcestershire sauce
  • 1 Tbsp low-sodium soy sauce
  • 1 Tbsp minced fresh thyme (or 1 tsp dried)
  • 1 sprig rosemary (or 3/4 tsp dried)
  • 1 1/2 lbs yellow potatoes, diced
  • 1 lb carrots, peeled and cut into chunks
  • 1 1/2 Tbsp cornstarch
  • 1 1/2 cups frozen petite peas
  • 1/4 cup minced fresh parsley

Instructions

  1. Heat 1 Tbsp olive oil in a large skillet over medium-high heat. Sear half of the beef until browned, then transfer to a slow cooker. Repeat with remaining beef.
  2. Add the remaining oil to the skillet and sauté onions and celery for 3 minutes. Then add garlic and sauté for 30 seconds. Stir in the tomato paste and cook, stirring for 1 minute.
  3. Pour in 1 cup of beef broth, Worcestershire sauce, soy sauce, thyme, and rosemary into the skillet. Mix well.
  4. Layer potatoes and carrots over the beef in the slow cooker. Then pour the broth mixture over the top along with the remaining beef broth. Season lightly with salt and pepper.
  5. Cover and cook on low for 7-8 hours, allowing the flavors to mix.
  6. In a small bowl, whisk cornstarch with 1 1/2 Tbsp cold water until smooth. Stir this mixture into the slow cooker. Cook on high for 20-30 minutes until thickened.
  7. Stir in peas and half of the parsley before serving. Garnish with remaining parsley.

Notes

This stew is great for meal planning and freezes well. Thaw overnight before reheating.
