- 3 lbs boneless skinless chicken breasts
- 3/4 cup low sodium soy sauce
- 1/4 cup + 2 Tbsp apple cider vinegar
- 1/3 cup packed light-brown sugar
- 1/4 cup honey
- 3 Tbsp orange marmalade
- 1 tbsp finely grated fresh ginger
- 2 cloves garlic, finely minced
- 1/2 tsp freshly ground black pepper
- 1 1/2 Tbsp cold water
- 1 1/2 Tbsp cornstarch
- Cooked long grain white rice, for serving
- Sesame seeds, for garnish (optional)
Instructions
- Place the chicken in the slow cooker and set it aside.
- In a mixing bowl, whisk together the soy sauce, apple cider vinegar, light-brown sugar, honey, orange marmalade, ginger, garlic, and black pepper.
- Pour the mixture over the chicken in the slow cooker, cover it with a lid, and cook on low heat for 4 to 5 hours.
- Remove the chicken from the slow cooker and shred it.
- Strain the sauce from the slow cooker through a fine mesh strainer into a medium saucepan.
- In a small mixing bowl, whisk together 1 1/2 Tbsp of cold water and the cornstarch.
- Pour the cornstarch mixture into the liquid in the saucepan and heat it over medium-high heat, stirring constantly, until it is gently boiling.
- Allow the mixture to gently boil for about 20 seconds until it thickens.
- Return the shredded chicken to the slow cooker and pour the teriyaki sauce from the saucepan over the chicken.
- Toss gently to evenly coat the chicken with the sauce.
- Serve warm over cooked rice, garnished with optional sesame seeds, and diced fresh pineapple if desired.
Notes
For a variation, you can add vegetables such as bell peppers or carrots. Adjust sweetness by reducing honey or brown sugar.
