Slow Cooker Chicken Teriyaki

Ingredients

  • 3 lbs boneless skinless chicken breasts
  • 3/4 cup low sodium soy sauce
  • 1/4 cup + 2 Tbsp apple cider vinegar
  • 1/3 cup packed light-brown sugar
  • 1/4 cup honey
  • 3 Tbsp orange marmalade
  • 1 tbsp finely grated fresh ginger
  • 2 cloves garlic, finely minced
  • 1/2 tsp freshly ground black pepper
  • 1 1/2 Tbsp cold water
  • 1 1/2 Tbsp cornstarch
  • Cooked long grain white rice, for serving
  • Sesame seeds, for garnish (optional)

Instructions

  1. Place the chicken in the slow cooker and set it aside.
  2. In a mixing bowl, whisk together the soy sauce, apple cider vinegar, light-brown sugar, honey, orange marmalade, ginger, garlic, and black pepper.
  3. Pour the mixture over the chicken in the slow cooker, cover it with a lid, and cook on low heat for 4 to 5 hours.
  4. Remove the chicken from the slow cooker and shred it.
  5. Strain the sauce from the slow cooker through a fine mesh strainer into a medium saucepan.
  6. In a small mixing bowl, whisk together 1 1/2 Tbsp of cold water and the cornstarch.
  7. Pour the cornstarch mixture into the liquid in the saucepan and heat it over medium-high heat, stirring constantly, until it is gently boiling.
  8. Allow the mixture to gently boil for about 20 seconds until it thickens.
  9. Return the shredded chicken to the slow cooker and pour the teriyaki sauce from the saucepan over the chicken.
  10. Toss gently to evenly coat the chicken with the sauce.
  11. Serve warm over cooked rice, garnished with optional sesame seeds, and diced fresh pineapple if desired.

Notes

For a variation, you can add vegetables such as bell peppers or carrots. Adjust sweetness by reducing honey or brown sugar.
