Slow Cooker Chicken Thighs

Ingredients

  • 8 boneless skinless chicken thighs, trimmed (about 2.5 lbs)
  • 1/3 cup ketchup
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 1 Tbsp sriracha
  • 2 tsp toasted sesame oil
  • 1 Tbsp minced garlic
  • 1 Tbsp peeled and minced fresh ginger
  • 2 tsp rice vinegar
  • 2 Tbsp cornstarch
  • 2 Tbsp water
  • Sliced green onions and sesame seeds (for garnish, optional)

Instructions

  1. Place the chicken thighs in the slow cooker.
  2. In a mixing bowl, whisk together the ketchup, honey, soy sauce, sriracha, sesame oil, garlic, and minced ginger.
  3. Pour the sauce mixture over the chicken thighs in the slow cooker.
  4. Cover the slow cooker and set it on low heat. Cook for 3 to 4 hours until the chicken is cooked through and tender.
  5. Transfer the chicken to a serving plate and cover it with foil. Pour the juices from the slow cooker into a saucepan and add the rice vinegar. Heat until it starts to simmer.
  6. Whisk together the cornstarch and water, then slowly pour this mixture into the simmering sauce. Whisk until the sauce thickens.
  7. Pour the thickened sauce over the chicken. Garnish with sliced green onions and sesame seeds if desired.

Notes

You can marinate the chicken in the sauce overnight for extra flavor. Serve with rice or noodles.
