- 1 lb lean ground beef
- 1 cup low-carb marinara sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tablespoon chili powder
- 1 teaspoon salt
- 2 teaspoons cumin
- 1 teaspoon paprika
- 1 1/2 teaspoons cayenne powder (optional)
- 1 cup bell peppers, diced
- 3 cups cauliflower, chopped
- 4 oz cream cheese, cut into pieces
- 1 1/2 cups shredded cheddar cheese
Instructions
- In a small bowl, mix together garlic powder, onion powder, chili powder, salt, cumin, paprika, and cayenne powder.
- Add ground beef to the slow cooker and mix in half of the spice mixture.
- Mix the remaining spices with the marinara sauce and pour over the ground beef.
- Add chopped cauliflower and diced bell peppers to the slow cooker and mix thoroughly.
- Sprinkle cream cheese cubes over the mixture and top with shredded cheddar cheese.
- Cover and cook for 3-4 hours on high or 4-6 hours on low, stirring halfway through if possible.
- After cooking, stir the casserole once more and let cool slightly before serving.
Notes
This casserole can be served alone or with sides like a garden salad or avocado.
