Slow Cooker Keto Taco Ground Beef Casserole

Ingredients

  • 1 lb lean ground beef
  • 1 cup low-carb marinara sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon chili powder
  • 1 teaspoon salt
  • 2 teaspoons cumin
  • 1 teaspoon paprika
  • 1 1/2 teaspoons cayenne powder (optional)
  • 1 cup bell peppers, diced
  • 3 cups cauliflower, chopped
  • 4 oz cream cheese, cut into pieces
  • 1 1/2 cups shredded cheddar cheese

Instructions

  1. In a small bowl, mix together garlic powder, onion powder, chili powder, salt, cumin, paprika, and cayenne powder.
  2. Add ground beef to the slow cooker and mix in half of the spice mixture.
  3. Mix the remaining spices with the marinara sauce and pour over the ground beef.
  4. Add chopped cauliflower and diced bell peppers to the slow cooker and mix thoroughly.
  5. Sprinkle cream cheese cubes over the mixture and top with shredded cheddar cheese.
  6. Cover and cook for 3-4 hours on high or 4-6 hours on low, stirring halfway through if possible.
  7. After cooking, stir the casserole once more and let cool slightly before serving.

Notes

This casserole can be served alone or with sides like a garden salad or avocado.
