- 10 graham cracker whole sheets, finely crushed
- 6 Tbsp unsalted butter, cut into 1-Tbsp pieces
- 1/8 tsp salt
- 6 oz semi-sweet chocolate, finely chopped
- 6 oz milk chocolate, finely chopped (or an additional 6 oz semi-sweet if desired)
- 2 Tbsp unsalted butter, diced into pieces
- 3/4 cup heavy cream
- 3 large egg whites
- 3/4 cup granulated sugar
- 1/8 tsp salt
- 1/8 tsp cream of tartar
- 1/2 tsp vanilla extract
Instructions
- Preheat the oven to 350°F. In a mixing bowl, stir together the graham crackers, melted butter, and salt. Firmly press the mixture into the bottom and sides of a 9-inch pie plate. Bake until golden brown, about 8 to 9 minutes. Let cool completely.
- For the filling, place the chopped semi-sweet chocolate, milk chocolate, and 2 tablespoons of butter in a bowl. Bring the heavy cream to a light boil, then pour over the chocolate mixture and stir until smooth. Pour this filling into the cooled crust and chill in the refrigerator for about 1 hour until set.
- To make the topping, add the egg whites, sugar, and salt to a heatproof bowl over simmering water. Stir until it reaches 160°F. Remove from heat, add cream of tartar, and beat until stiff, glossy peaks form, about 5 to 8 minutes. Add vanilla extract.
- Spread the meringue topping over the chocolate filling. Optionally, use a kitchen torch to toast the topping. Cut the pie into slices to serve and refrigerate leftovers for up to 3 days.
Notes
For best results, make the meringue topping just before serving to ensure freshness and fluffiness.
