- 1 cup Granulated Sugar (adjust to taste if desired)
- 1 cup All-purpose Flour (sifted to reduce lumps)
- 1/2 cup Strong Brewed Coffee (chilled for better texture)
- 1/4 cup Unsalted Butter (melted, but not too hot)
- 1 teaspoon Baking Powder (helps achieve that fluffy texture)
Instructions
- Preheat the oven and prepare a baking tin.
- In a mixing bowl, whip together the eggs and sugar until airy and pale.
- Gently fold in the sifted flour until just combined.
- Pour in the strong brewed coffee and mix gently.
- Pour the batter into the lined tin and bake until a toothpick inserted comes out clean.
- While the cake is still warm, brush more coffee on top to soak it.
Notes
For best results, allow the cake to cool completely before storing it in an airtight container. It can also be frozen in individual slices for cravings later.
