This bold and hearty Southwest Dense Bean Salad is packed with chickpeas, black beans, fire-roasted corn, jalapeños, and a smoky chipotle dressing. Perfect for meal prep, potlucks, BBQs, and taco night sides — spicy, protein-packed, and endlessly versatile!

  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup fire-roasted corn (fresh, frozen, or canned, charred or defrosted if needed)
  • 12 jalapeños, diced (adjust to taste)
  • 1/3 cup chopped fresh cilantro
  • Optional Additions:
  • 1/2 cup diced red bell peppers
  • 1/2 cup cherry tomatoes, halved
  • 1 avocado, diced
  • Queso fresco or cotija cheese, crumbled
  • For the Chipotle Dressing:
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon chipotle powder (adjust to taste)
  • 1 teaspoon honey or agave (optional)
  • Salt & pepper to taste

Instructions

  1. Prepare Salad Base: Drain and rinse chickpeas and black beans, pat dry. Char or defrost fire-roasted corn. Dice jalapeños to desired heat level and finely chop cilantro. In a large bowl, combine beans, corn, jalapeños, and cilantro. Add optional red bell peppers or cherry tomatoes if using.
  2. Make Chipotle Dressing: In a small blender or jar, combine olive oil, lime juice, chipotle powder, honey or agave (if using), salt, and pepper. Blend or shake until emulsified.
  3. Combine & Toss: Pour dressing over salad base and toss to coat evenly. Let sit for at least 10 minutes to allow flavors to meld.
  4. Serve & Enjoy: Serve in a bowl as a meal prep salad, in tortillas or lettuce wraps, or on tortilla chips for mini taco bites. Add avocado and crumbled cheese if desired. Enjoy cold or at room temperature.
