Ingredients

- 1 package (1/4 ounce) active dry yeast
- 1/4 cup warm water (110°F to 115°F)
- 1 cup warm 2% milk
- 2 large eggs, at room temperature
- 1/2 cup butter, softened
- 1 tablespoon sugar
- 1 teaspoon salt
- 4–1/4 to 4-3/4 cups all-purpose flour
- 3/4 cup chopped mixed candied fruit
- 3/4 cup dried currants
- 1/2 cup cold butter, cut into 24 pieces (1 teaspoon each)
Instructions
- Dissolve the yeast in the warm water. Let it sit for about 5 minutes until frothy.
- Combine the warm milk, eggs, softened butter, sugar, salt, and yeast mixture. Stir until smooth.
- Add 3 cups of flour and beat on medium speed until smooth. Gradually stir in enough remaining flour to form a soft, sticky dough.
- Knead the dough on a floured surface for 6-8 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a towel, and let it rise in a warm place for about 1 hour until doubled in size.
- Punch down the dough and knead in the candied fruit and currants.
- Divide the dough into 24 pieces, shape each into a ball, and place 1 teaspoon of cold butter in the center.
- Seal the edges over the butter and place the rolls in a greased baking pan.
- Cover and let them rise again for about 45 minutes until doubled in size.
- Preheat oven to 375°F and bake for 15-20 minutes until golden brown.
- Cool in the pan for 5 minutes before serving warm.
Notes
Optionally sprinkle with powdered sugar before serving. Great with coffee or tea.
