- 2 1/4 cups all-purpose flour
- 1 Tbsp cornstarch
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup granulated sugar
- 2 large eggs, at room temperature
- 1 cup unsalted butter, at room temperature
- 1 1/2 tsp vanilla extract
- 1/2 tsp almond extract
- 2 1/4 cups powdered sugar
- 1/2 cup unsalted butter, at room temperature
- 2 to 3 Tbsp heavy cream
- 1 tsp vanilla extract
- Few drops of food coloring, optional
- Sprinkles, optional
Instructions
- Preheat your oven to 350°F. Butter a 13 by 9 inch baking sheet.
- In a medium mixing bowl, whisk together flour, cornstarch, baking powder, and salt. Set aside.
- Cream together 1 cup of butter and 1 cup of sugar in an electric mixer until blended. Scrape down the sides as needed.
- Add eggs one at a time, followed by vanilla and almond extract, mixing until combined.
- Mix in the flour mixture until no flour remains, being careful not to overmix.
- Spread the batter evenly into the prepared baking dish.
- Bake for 14 to 16 minutes until puffy and just baked through. Cool completely on a wire rack.
- While cooling, prepare the frosting with powdered sugar, 1/2 cup butter, heavy cream, and vanilla extract until fluffy.
- Once cool, frost the bars and add sprinkles if desired.
Notes
Store cookie bars in an airtight container for up to 5 days or freeze for up to 2 months. For added flavor variations, consider adding chocolate chips, nuts, or citrus zest.
