- 2 1/3 cups all-purpose flour
- 2 Tbsp cornstarch
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1/2 cup sour cream (full fat)
- 1 tsp vanilla extract
- 1/4 tsp almond extract
- 1/2 cup unsalted butter, softened (for frosting)
- 3 cups powdered sugar
- 3 Tbsp half and half (more as needed)
- 3/4 tsp vanilla extract (for frosting)
Instructions
- In a large mixing bowl, whisk together the flour, cornstarch, baking powder, baking soda, and salt for 20 seconds. Set aside.
- In the bowl of an electric stand mixer, cream together the softened butter and granulated sugar until fluffy.
- Mix in the large egg until combined, then blend in the sour cream, vanilla extract, and almond extract.
- With the mixer set on low, slowly add in the flour mixture until just combined.
- Divide the dough into 2 equal portions. Shape into disks, wrap in plastic, and chill for 1 1/2 to 2 hours.
- Preheat the oven to 350°F (175°C) during the last 20 minutes of chilling.
- Roll out the dough on a floured surface to 1/4-inch thickness and cut into shapes.
- Transfer the cut cookies to a baking sheet lined with parchment paper.
- Bake for 9 to 11 minutes until the cookies are nearly set but not browned.
- Cool on a wire rack.
- For the frosting, blend together softened butter, powdered sugar, half and half, and vanilla extract until fluffy. Adjust consistency as needed.
- Once cookies are cool, frost and store in an airtight container.
Notes
Cookies can be stored at room temperature for about a week. They can also be frozen for longer storage.
