Delicious Swirled Christmas Cookies

These festive pinwheel cookies are buttery and easy to make, with vibrant colors and a delightful vanilla flavor, perfect for holiday celebrations.

Ingredients

  • 1 cup unsalted butter, softened to room temperature
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 and 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon fine sea salt
  • Gel food coloring in red and green
  • Optional: 2 to 3 tablespoons holiday sprinkles

Instructions

  1. Cream the butter and sugar until fluffy.
  2. Mix in the egg and vanilla extract.
  3. Add the dry ingredients and mix just until combined.
  4. Divide the dough into three equal parts and tint one red, one green, and leave one plain.
  5. Chill the dough for 20 to 30 minutes.
  6. Roll each colored dough into a rectangle approximately 9 by 12 inches and 1/4 inch thick.
  7. Stack the layers and gently roll them into a log using parchment paper.
  8. Wrap the log tightly and chill for at least 1 hour.
  9. Slice the log into 1/4 inch thick cookies.
  10. Roll the edges in sprinkles (optional).
  11. Bake at 350°F for 9 to 11 minutes.

Notes

Chill twice if your kitchen is warm to maintain clean lines, and use a thin knife for slicing.
