- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1/2 cup milk
- 1/4 cup fig jam
- 1 large egg
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- In a separate bowl, mix the milk and egg.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Gently fold in the fig jam.
- Turn the dough out onto a floured surface and pat into a circle about 1 inch thick.
- Cut into 8 wedges and place on a baking sheet.
- Bake for 20 to 25 minutes or until golden brown.
- Allow to cool slightly before serving.
Notes
For a healthier version, swap half of the all-purpose flour for whole wheat flour and reduce sugar.
