Tender Cornmeal Scones with Fig Jam

Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup milk
  • 1/4 cup fig jam
  • 1 large egg

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. In a separate bowl, mix the milk and egg.
  5. Add the wet ingredients to the dry ingredients and stir until just combined.
  6. Gently fold in the fig jam.
  7. Turn the dough out onto a floured surface and pat into a circle about 1 inch thick.
  8. Cut into 8 wedges and place on a baking sheet.
  9. Bake for 20 to 25 minutes or until golden brown.
  10. Allow to cool slightly before serving.

Notes

For a healthier version, swap half of the all-purpose flour for whole wheat flour and reduce sugar.
