- 1–1/2 pounds beef stew meat, cut into 1-inch cubes
- 1/2 teaspoon salt, divided
- 6 tablespoons all-purpose flour, divided
- 1/2 teaspoon smoked paprika
- 1 tablespoon canola oil
- 3 tablespoons tomato paste
- 2 teaspoons herbes de Provence
- 2 garlic cloves, minced
- 2 cups dry red wine
- 2 cups beef broth
- 1–1/2 teaspoons minced fresh rosemary, divided
- 2 bay leaves
- 3 cups cubed peeled potatoes
- 3 cups coarsely chopped onions (about 2 large)
- 2 cups sliced carrots
- 2 tablespoons cold water
- 2 tablespoons balsamic or red wine vinegar
- 1 cup fresh or frozen peas
- Additional fresh rosemary, optional
Instructions
- In a small bowl, toss the beef with 1/4 teaspoon of salt.
- In a large bowl, mix together 4 tablespoons of flour and the smoked paprika.
- Add the seasoned beef to the flour mixture and toss to coat.
- Heat a Dutch oven over medium heat and add the canola oil. Brown the beef on all sides.
- Stir in the tomato paste, herbes de Provence, and minced garlic. Cook until fragrant.
- Pour in the dry red wine and simmer until it reduces by half, about 5 minutes.
- Stir in the beef broth, 1 teaspoon of minced fresh rosemary, and bay leaves. Bring back to a boil, then simmer for 1-1/2 hours.
- Add the cubed potatoes, chopped onions, and sliced carrots. Cover and simmer for another 30 minutes.
- Discard the bay leaves. Mix remaining rosemary, salt, flour, cold water, and vinegar in a small bowl; stir into the stew.
- Bring back to a boil, stir in the peas, and cook until thickened, about 2 minutes.
Notes
This stew tastes even better the next day and can be made ahead for meal prep or frozen for future meals.
