  • 1 medium white onion, diced
  • 1 (4-ounce) can diced green chiles
  • 1 cup (4 ounces) shredded pepper jack cheese
  • 1 cup (4 ounces) shredded cheddar cheese
  • 1 cup (4 ounces) shredded Oaxaca cheese (or Monterey Jack)
  • 1/2 cup diced grape tomatoes (optional, for garnish)
  • 1/4 cup chopped cilantro (optional, for garnish)
  • 1 tbsp crumbled queso fresco (optional, for garnish)
  • Tortilla chips or crusty bread, for serving
  • 1 tsp smoked paprika (optional)
  • 1/2 tsp ground cumin (optional)
  • 1/4 tsp cayenne pepper (optional)

Instructions

  1. Preheat the broiler and set an oven rack 4-6 inches from the heat source.
  2. Heat a cast iron skillet over medium heat and add the chorizo. Cook until browned, breaking it into crumbles (about 5 minutes).
  3. Add diced onion and green chiles, cooking until soft and fragrant (5-7 minutes).
  4. Stir in smoked paprika, cumin, and cayenne pepper for extra flavor.
  5. Turn off the heat and evenly distribute the shredded cheeses over the chorizo mixture.
  6. Broil for 3-5 minutes, or until the cheese is fully melted and bubbling.
  7. Garnish with diced grape tomatoes, chopped cilantro, and crumbled queso fresco.
  8. Serve immediately with tortilla chips or crusty bread.

Notes

For an extra kick, add chopped pickled jalapeños or drizzle with hot sauce.
