- 1 lb ground fresh Mexican-style chorizo (without casing)
- 1 medium white onion, diced
- 1 (4-ounce) can diced green chiles
- 1 cup (4 ounces) shredded pepper jack cheese
- 1 cup (4 ounces) shredded cheddar cheese
- 1 cup (4 ounces) shredded Oaxaca cheese (or Monterey Jack)
- 1/2 cup diced grape tomatoes (optional, for garnish)
- 1/4 cup chopped cilantro (optional, for garnish)
- 1 tbsp crumbled queso fresco (optional, for garnish)
- Tortilla chips or crusty bread, for serving
- 1 tsp smoked paprika (optional)
- 1/2 tsp ground cumin (optional)
- 1/4 tsp cayenne pepper (optional)
Instructions
- Preheat the broiler and set an oven rack 4-6 inches from the heat source.
- Heat a cast iron skillet over medium heat and add the chorizo. Cook until browned, breaking it into crumbles (about 5 minutes).
- Add diced onion and green chiles, cooking until soft and fragrant (5-7 minutes).
- Stir in smoked paprika, cumin, and cayenne pepper for extra flavor.
- Turn off the heat and evenly distribute the shredded cheeses over the chorizo mixture.
- Broil for 3-5 minutes, or until the cheese is fully melted and bubbling.
- Garnish with diced grape tomatoes, chopped cilantro, and crumbled queso fresco.
- Serve immediately with tortilla chips or crusty bread.
Notes
For an extra kick, add chopped pickled jalapeños or drizzle with hot sauce.
