- 4 cups cubed crusty bread (sourdough, ciabatta, or baguette)
- Extra-virgin olive oil, for drizzling

- 1 cup mayonnaise
- ¼ cup extra-virgin olive oil
- 2 tablespoons fresh lemon juice
- 2 teaspoons Dijon mustard
- 1 garlic clove, grated
- 1 teaspoon Worcestershire sauce
- ½ teaspoon anchovy paste (optional)
- Pinch of sea salt
- Freshly ground black pepper, to taste
- ½ cup freshly grated Parmesan cheese
- 1 teaspoon red wine vinegar (optional)
- 1 pound romaine lettuce, chopped
- ½ cup shaved Parmesan cheese
- Freshly ground black pepper
- ½ teaspoon lemon zest (optional)
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- Place bread cubes on the sheet, drizzle with olive oil, and season with sea salt, garlic powder, and oregano.
- Bake for 10-18 minutes, stirring halfway, until golden brown and crispy.
- In a mixing bowl, whisk together mayonnaise, olive oil, lemon juice, Dijon mustard, garlic, Worcestershire sauce, anchovy paste (if using), sea salt, black pepper, and red wine vinegar.
- Stir in grated Parmesan cheese and adjust seasoning if needed.
- In a large salad bowl, combine romaine lettuce, half of the dressing, half of the croutons, and half of the Parmesan cheese.
- Toss to coat, then add remaining croutons, cheese, black pepper, and lemon zest.
- Serve immediately and enjoy!
Notes
For extra protein, add grilled chicken, shrimp, or crispy bacon. Toss just before serving to maintain the crunch!
