- 4 large flour tortillas
- 6 eggs, scrambled
- 1/2 cup cooked bacon or chorizo
- 1 cup shredded cheddar or Monterey Jack cheese
- 1/2 cup diced tomatoes
- 1/4 cup diced onions
- 1/2 cup sautéed bell peppers
- 1/2 cup black beans
- 1/2 cup diced avocado
- 1/4 cup fresh cilantro
- 1/4 cup sour cream
- 1/4 cup salsa or hot sauce
- 1 tbsp olive oil
Instructions
- Heat olive oil in a skillet over medium heat.
- Add diced onions and bell peppers, sauté until softened.
- In a separate pan, scramble eggs until fluffy.
- Warm tortillas in a dry skillet for a few seconds on each side.
- Place tortillas on a flat surface and layer scrambled eggs, cooked bacon or chorizo, cheese, tomatoes, black beans, and avocado.
- Drizzle with sour cream and salsa.
- Fold in the sides of the tortilla, then roll tightly from the bottom up.
- Serve immediately or wrap in foil for meal prep.
Notes
For a healthier option, use whole wheat tortillas and substitute Greek yogurt for sour cream.
