Ingredients

  • 6 eggs, scrambled
  • 1/2 cup cooked bacon or chorizo
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup diced onions
  • 1/2 cup sautéed bell peppers
  • 1/2 cup black beans
  • 1/2 cup diced avocado
  • 1/4 cup fresh cilantro
  • 1/4 cup sour cream
  • 1/4 cup salsa or hot sauce
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced onions and bell peppers, sauté until softened.
  3. In a separate pan, scramble eggs until fluffy.
  4. Warm tortillas in a dry skillet for a few seconds on each side.
  5. Place tortillas on a flat surface and layer scrambled eggs, cooked bacon or chorizo, cheese, tomatoes, black beans, and avocado.
  6. Drizzle with sour cream and salsa.
  7. Fold in the sides of the tortilla, then roll tightly from the bottom up.
  8. Serve immediately or wrap in foil for meal prep.

Notes

For a healthier option, use whole wheat tortillas and substitute Greek yogurt for sour cream.
