Vampire Bite Cupcakes

Ingredients

  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup strawberry sauce
  • Buttercream frosting
  • Red food coloring (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, mix together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Add the eggs, milk, vegetable oil, and vanilla. Mix until blended.
  4. Carefully stir in the boiling water until the batter is smooth.
  5. Fill each cupcake liner about 2/3 full with the batter and bake for 18-20 minutes, or until a toothpick comes out clean.
  6. Let the cupcakes cool completely. Once cooled, cut a small hole in the center of each cupcake and fill it with strawberry sauce.
  7. Frost the cupcakes with buttercream frosting, adding some streaks of red food coloring to create a bloody effect.

Notes

Store cupcakes in an airtight container at room temperature for up to three days, or freeze for longer storage.
