Ingredients

- 2 cups broccoli florets
- 2 cups sliced mushrooms
- 1 bell pepper, sliced
- 1 carrot, sliced
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 3 tablespoons soy sauce
- 2 tablespoons olive oil
- Salt and pepper to taste
- Cooked rice or noodles for serving
Instructions
- Heat olive oil in a large pan over medium heat.
- Add garlic and ginger, sauté for 1 minute.
- Add broccoli, mushrooms, bell pepper, and carrot; stir fry for 5-7 minutes until vegetables are tender but still crisp.
- Pour in soy sauce and stir to coat vegetables.
- Season with salt and pepper.
- Serve over cooked rice or noodles.
Notes
For a high protein meal, add cubed firm tofu, baked tempeh, or a scoop of edamame on top. Substitute cauliflower rice for a lighter option.
