Ingredients

- 1 package of silken tofu (1 pound or about 450g, drained)
- 150 g dark chocolate (or other dairy-free chocolate)
- 1–2 tablespoons of maple syrup
- 1 teaspoon of vanilla
Instructions
- Melt the chocolate: Use a double boiler or microwave to melt the chocolate, stirring until fully melted.
- Blend the other ingredients: In a food processor, blend silken tofu, maple syrup, and vanilla until smooth.
- Combine the chocolate: Add the melted chocolate to the tofu mixture and blend until creamy.
- Chill the mousse: Transfer to serving cups and refrigerate for at least 1 hour.
- Enjoy! Serve as is or with toppings of your choice.
Notes
This mousse can be stored in the refrigerator for 3-4 days or frozen for up to a month.
