Vegan Muffins

Delicious and healthy vegan muffins that are easy to make in one bowl, perfect for breakfast or a snack.

Ingredients

  • 1 cup flour (all-purpose or gluten-free substitute)
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • A pinch of salt
  • 1/2 teaspoon cinnamon
  • 1/4 cup maple syrup
  • 1/2 cup almond milk
  • 3 tablespoons nut butter
  • 1 teaspoon vanilla extract
  • 1 medium banana (mashed)
  • 1/2 cup non-dairy chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 6-cup muffin tin.
  2. Sift together the flour, baking soda, baking powder, salt, and cinnamon in a mixing bowl.
  3. Stir in the almond milk, nut butter, maple syrup, vanilla extract, and mashed banana until smooth.
  4. Gently fold in the chocolate chips.
  5. Scoop the batter evenly into the muffin cups, optionally sprinkling more chocolate chips on top.
  6. Bake for 20-25 minutes until golden brown and a toothpick inserted comes out clean.
  7. Let cool slightly before removing from the tin and enjoy!
