- 3 large carrots
- 1/2 juice of lemon (freshly squeezed)
- 1.5 tablespoons white wine vinegar
- 1.5 teaspoons salt
- 2 pinches citric acid
- Freshly ground black pepper to taste
Instructions
- Wash and peel carrots if desired.
- Use a peeler or mandoline to slice carrots paper-thin.
- Place carrot slices in a lidded container.
- Add lemon juice, vinegar, salt, citric acid, and pepper.
- Secure lid and shake vigorously for 30 seconds.
- Enjoy immediately or marinate 10 minutes for extra flavor.
Notes
For a crispier version, marinate then air fry at 350°F for 8–10 minutes, flipping halfway. For a more traditional chip feel, fry in oil after marinating and drying. Old fashioned style uses malt vinegar and longer marination for deeper flavor.
