Bowl of fresh vinegar carrot chips with marinade ingredients on marble countertop

Salt and Vinegar Carrot Chips

A tangy, crunchy, and guilt-free snack made with raw or air-fried carrots marinated in vinegar, lemon, and citric acid. The perfect healthy alternative to traditional chips.

  • Total Time: 5 minutes
  • Yield: 2 servings 1x

Ingredients

Scale
  • 3 large carrots
  • 1/2 juice of lemon (freshly squeezed)
  • 1.5 tablespoons white wine vinegar
  • 1.5 teaspoons salt
  • 2 pinches citric acid
  • Freshly ground black pepper to taste

Instructions

  1. Wash and peel carrots if desired.
  2. Use a peeler or mandoline to slice carrots paper-thin.
  3. Place carrot slices in a lidded container.
  4. Add lemon juice, vinegar, salt, citric acid, and pepper.
  5. Secure lid and shake vigorously for 30 seconds.
  6. Enjoy immediately or marinate 10 minutes for extra flavor.

Notes

For a crispier version, marinate then air fry at 350°F for 8–10 minutes, flipping halfway. For a more traditional chip feel, fry in oil after marinating and drying. Old fashioned style uses malt vinegar and longer marination for deeper flavor.
