Instructions

- While syrup is cooking, whisk egg white in a clean bowl until soft peaks form.
- Slowly pour the hot simple syrup into the egg whites while whisking continuously to create a stable meringue.
- Sift the matcha powder into the meringue and gently fold until fully combined and vibrant green.
- Pour milk into a glass, then gently spoon the matcha cloud on top. Serve immediately.

Use quality matcha for best flavor and color. Ensure syrup is hot to safely cook the egg whites. Clean, oil-free equipment is essential for whipping the whites properly.
