White Chocolate Dipped Peppermint Sugar Cookies

Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cream of tartar
  • 1 1/2 cups granulated sugar
  • 1 cup unsalted butter, softened
  • 1 large egg
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • 3/4 tsp peppermint extract
  • 2 1/2 cups white chocolate chips
  • 2 1/2 Tbsp shortening
  • 1/3 cup peppermint bits or finely crushed candy canes

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the flour, baking soda, salt, and cream of tartar.
  3. In an electric mixer, combine the granulated sugar and softened butter until fluffy.
  4. Add the egg and mix well, then add the egg yolk, vanilla, and peppermint extracts.
  5. Slowly add the dry ingredients to the wet ingredients, mixing just until combined.
  6. Scoop out about 1 1/2 tablespoons of dough and shape into balls.
  7. Place the dough balls on a parchment-lined baking sheet, spacing them 2 inches apart.
  8. Bake for 10-11 minutes until slightly under-baked.
  9. Let cookies rest on the baking sheet for a few minutes, then transfer to a wire rack to cool.
  10. In a microwave-safe bowl, melt white chocolate chips and shortening in 20-second intervals until smooth.
  11. Dip half of each cooled cookie into the melted white chocolate and sprinkle with peppermint bits.
  12. Allow cookies to set at room temperature or refrigerate until set.

Notes

Make sure the cookies are cool before dipping them in chocolate for best results.
