- 2 3/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cream of tartar
- 1 1/2 cups granulated sugar
- 1 cup unsalted butter, softened
- 1 large egg
- 1 large egg yolk
- 1 tsp vanilla extract
- 3/4 tsp peppermint extract
- 2 1/2 cups white chocolate chips
- 2 1/2 Tbsp shortening
- 1/3 cup peppermint bits or finely crushed candy canes
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, whisk together the flour, baking soda, salt, and cream of tartar.
- In an electric mixer, combine the granulated sugar and softened butter until fluffy.
- Add the egg and mix well, then add the egg yolk, vanilla, and peppermint extracts.
- Slowly add the dry ingredients to the wet ingredients, mixing just until combined.
- Scoop out about 1 1/2 tablespoons of dough and shape into balls.
- Place the dough balls on a parchment-lined baking sheet, spacing them 2 inches apart.
- Bake for 10-11 minutes until slightly under-baked.
- Let cookies rest on the baking sheet for a few minutes, then transfer to a wire rack to cool.
- In a microwave-safe bowl, melt white chocolate chips and shortening in 20-second intervals until smooth.
- Dip half of each cooled cookie into the melted white chocolate and sprinkle with peppermint bits.
- Allow cookies to set at room temperature or refrigerate until set.
Notes
Make sure the cookies are cool before dipping them in chocolate for best results.
