White Chocolate Macadamia Nut Cookies

Ingredients

  • 1/2 cup butter, softened
  • 2/3 cup sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup plus 2 tablespoons all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 cup macadamia nuts, chopped
  • 1 cup white baking chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter and sugar in a large bowl until light and fluffy (5-7 minutes).
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together flour and baking soda.
  5. Gradually add the flour mixture to the creamed mixture, mixing until just combined.
  6. Stir in the chopped macadamia nuts and white baking chips.
  7. Line baking sheets with parchment paper and drop tablespoons of dough, leaving about 2 inches of space.
  8. Bake for about 10 to 13 minutes or until golden brown around the edges.
  9. Cool on the pans for 1 minute, then transfer to wire racks to cool completely.

Notes
