Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix gluten-free flour, almond meal, sugar, melted butter, and the egg.
- Add vanilla extract to the mixture and whisk until smooth.
- Plop spoonfuls of the mixture onto a baking sheet, flattening each slightly.
- Bake for about 12 minutes, until lightly golden and toasty.
Notes
For added flavor, consider mixing in coconut flakes or orange zest. These crispies can be frozen for weeks and are excellent for dipping or pairing with tea.
